Nit’ir qibe – Spiced Butter

Basic recipe for most Ethiopian dishes

Serves 4
250 g butter
approx. 2 cm finely chopped fresh ginger
1 clove of garlic finely chopped
1 red onion finely chopped
1 tbsp. fenugreek
2 tsp. cumin
3 tsp. dried basil
1 tsp. cardamom
1 tbsp. oregano
½ tsp. curcuma

Melt the butter and stir, making sure its colour does not change. Skim the foam from the surface. Add the onion, garlic, ginger and spices and continue simmering, stirring for 15 minutes. Remove from heat and let the spices settle at the bottom of the pot. Pour through a sieve and let the butter cool.
